Vegetables, not butter, thicken soup
By Better Homes and Gardens Creamy soups taste velvety rich and thick, but they can also score high on the fat chart The good news is that you can still create smooth, thick and flavorful soups that are also low in fat The secret is to thicken them with pureed vegetables instead of the traditional butter sauce and-or cream. Squash and Apple Soup is good served as an appe.tizer or as a sandwich go-along. It blends the flavors of carrot onion, , squash or pumpkin with apple juice and ginger. Low-fat milk substitutes for the cream. Squash and Apple Soup ?2 cup chopped onion , 1 small carrot, sliced (1-3 cup) - 1K cups apple cider or apple juice .-1 teaspoon instant chicken bouillon . - granules , • 1 teaspoon lemon juice Vi teaspoon white pepper , ?4 teaspoon ground ginger 2 cups cooked, mashed acorn squash or one 16-ounce can pumpkin • 1 cup low-fat milk * Plain low-fat yogurt or reduced- • calorie dairy sour cream (optional) -. Snipped chives (optional In a large saucepan cook onion and carrot in apple cider or juice, covered,
about 12 minutes or until very tender. Do not drain. Add bouillon granules, lemon juice, pepper and ginger. Transfer the carrot mixture to a blender container or food processor bowl. Add mashed squash; cover and blend or process until smooth. Return mixture to saucepan; add milk. Bring to boiling, stirring constantly. Reduce heat; cover and simmer for 5 to 10 minutes or until flavors are blended, stirring once or twice. If desired, top each serving with yogurt or sour cream and chives. Makes 4 to 6 side-dish servings Note: To cook squash on the range: Wash, quarter and remove seeds from two 1-pound acorn squash. Place squash in a large saucepan with 1 cup water. Bring to boiling; reduce heat. Cover and simmer for 20 to 25 minutes or until squash is tender. Drain. Microwave Instructions: Wash, halve, remove seeds and prick skin of squash. In a 12- by 716- by 2-inch microwave-safe dish place squash halves, skin side up; add 3 tablespoons water. Cover with plastic wrap; turn back corner to vent. Cook, covered, on 100 percent power (high) for 12 to 15 minutes or until tender, rearranging once. Drain.

DEAR ABBY: I’ve never seen this situation written up in your column: it’s mothers-in-law who carry their ex-sons-in-law (or daughters-in-law) on a silver platter in front of the present son-in-law or daughter-in-law. Why do they do this when they know it irritates the present son- or daughter-in-law? Also, if the “ex” was so terrific in the first place, they wouldn’t be “ex” now, right? Please print this, Abby. Dear Heloise: While painting storm windows, we decided to use masking tape around the edges of the glass to make paint removal easier' What a mistake! After we had used primer and two coats of paint, we noticed that the adhesive on the masking tape had dried. I called a hardware store to ask for help and they told me to try vinegar and a straightedge razor blade. It worked! After moistening the tape, we scraped it off with the razor blade. Vinegar certainly has a lot of uses. Could you list a few more? Kathy Curtis, Terre Haute, Ind. Vinegar has so many uses. I’d be glad to list a few for you. Try adding white vinegar to the rinse water when you mop. It will cut through any soap film left on the floor. A quick way to make tamales By Better Homes and Gardens In today's world, a big drawback to most authentic Mexican cooking has been the time it takes to make it But no more. Now you can explore real South-of-the-Border tamales, for instance, by making them in a fast, untraditional way in your microwave oven. For these hot tamales, chorizo (chor-EE-so), a Mexican pork sausage, spices up the filling. You’ll find chorizo in Mexican specialty food stores. If you’re using com husks for wrapping the tamales, soften them quickly in your microwave. In a pinch, you can substitute hot Italian sausage for the chorizo and plain parchment paper for the com husks. Chorizo Tamales 8 com husks or parchment paper 2 cups water 1 and 2-3rds cups masa harina tortilla flour ft cup warm water 2-3rds cup shortening teaspoon salt ¥4 pound chorizo or hot Italian sausage y* cup chopped onion ¥2 cup salsa 2 tablespoons raisins ¥2 cup water Salsa (optional) In a 3-quart microwave-safe casserole arrange husks; add the 2 cups water. Cover; cook on 100 percent power (high) for 4 to 6 minutes or until boiling. Let stand about 1 hour, or until softened. Drain; pat dry. (Or, cut parchment paper into eight 8- by 6-inch rectangles.) Combine tortilla flour and the % cup warm water. Cover; let stand for 20 minutes. In a large mixing bowl combine shortening and salt; beat with an electric mixer on medium speed until fluffy. Add flour mixture; beat until combined. In a 2-quart, microwave-safe casserole cook meat and onion, covered, on high 4 to 6 minutes or until no longer pink. Drain fat. Stir in the ¥2 cup salsa and raisins. For each tamale, spoon ¥4 cup dough onto a com husk or parchment wrapper. Spread dough on wrapper into a 5- by 4-inch rectangle, leaving 1 inch space at both ends. Spoon 2 rounded tablespoons of the filling lengthwise down the center of dough. Fold one long edge over the filling, overlapping about ¥2 inch. Roll up jelly-roll style. Tie ends. Arrange tamales in a 12- by I¥2- by 2'/2-inch microwave-safe baking dish. Add the ¥2 cup water. Cover with vented microwave-safe plastic wrap. Cook on high for 8 to 10 minutes or until dough is pulling away from the wrappers. To serve, snip ties and unwrap tamales. If desired, serve with additional salsa. Makes 8 tamales or 4 servings. PAINTED WALL Q. We have a wallpapered bathroom. When it was papered, the wall was sized. Now I want to remove the paper and paint the area. The paper comes off very easily, but how do I remove the sizing? Mrs. T. Groszkiewicz, Marietta, Ga. A. According to a major paint store, you don’t need to remove the sizing. They recommend washing the wall with a mild ammonia solution (about 1 part ammonia to 5 parts water) to remove any loose debris before painting. If the surface under the wallpaper has never been painted, you’ll need to apply two coats of paint. For a more decorative wall, add texture (available at most paint stores) to the paint. Heloise
