Low-fat stew stocks up on vegetables, cuts back on meat
Better Homes and Gardens Magazine The flavor of cookbook author Anne Lindsay’s stew appeals to all ages only the extra fat is missing. Lindsay says, “To keep the stew ’ portions generous and the fat at a minimum, I cut back on meat and stock up on a variety of fresh vegetables.” For a new taste, she adds a little shredded orange peel.

Cut beef into 1-inch pieces. Spray a Dutch oven or large heavy saucepan with non-stick coating. Heat pan over medium-high heat; add beef

ana cook, stirring until brown on all sides. Remove from heat. Carefully add 4 cups water to the pan and return to the heat. Bring to boiling, scraping up any brown bits on the bottom of the pan. Add onions, orange peel, bouillon granules, thyme, oregano, pepper and bay leaf. Cover; return to neat and simmer for 1 hour. Cut carrots, parsnips and turnip into %-inch pieces. Add carrots and turnips to beef mixture; simmer 10 minutes. Add parsnips, potatoes and celery; simmer 20 minutes or until vegetables are tender. Add peas and parsley. Cover and cook 5 minutes more. With a slotted spoon, remove meat and vegetables from broth. Cover and keep warm.

P.I.E. is providing free red ribbons to tie on your car antenna or rear view mirror to show your support. All Putnam County residents are asked to participate. Central National Bank is sponsoring its fifth annual Halloween Costume Contest from 7-8:30 p.m. Wednesday, Oct. 24 at the Putnam County Fairgrounds Community Building. All children ages 12 and under and their parents are invited. Nine SSO savings bonds will be awarded to the scariest, funniest and most original. Age groups are infant to four, five to eight and nine to 12. Free door prizes will be given away and candy bags and refreshments will be served. Clowns will provide entertainment and the first 200 children through the door will receive pumpkins. The Greencastle League of Women Voters and WGRE radio are sponsoring a candidates forum from 7-9 p.m. Wednesday, Oct. 24 at Meharry Hall, East College, DePauw University. The forum will feature candidates running for U.S. House of Representatives, state legislature and county offices. The public is invited. The forum will also be broadcast live over WGRE 91.5 FM. There will be a called conclave of KT No. 11 Commandery at the Greencastle Masonic Lodge to confer the Order of Malta at 7 p.m. Wednesday, Oct. 24. All Sir Knights are welcome and needed. Friday Anne’s Fashion Comer will be one of the businesses represented in the “Celebration of Fashion” style show at 7 p.m. Friday, Oct. 26 at the community building in Danville. Starting time is 6:30 p.m. Tuesday Dad’s Night is Tuesday, Oct. 29 at Peace Lutheran Preschool for the Tuesday-Thursday children. An hour of pumpkin carving and popcorn will begin at 6:30 p.m. Don’t forget your pumpkin.
