BATTER-FRIED ■ PLANTAIN 2 to 3 tablespoons milk Corn oil (for frying) f egg 1 large or 2 medium-size 1 tablespoon brown sugar ripe plantains (with almost 6 tablespoons all purpose skin), peeled and cut flour diagonally into '/2-inch thick Pinch of salt slices Mix milk, egg, sugar, flour and salt until smooth. Heat oil in large skillet over mdeium heat. Dip each plantain slice into batter, then drop into oil. Fry until browned, about 2 minutes on each side. Drain on paper towel. Serve warm or at room temperature. (Bananas can be substituted; halve horizontally instead of slicing.) Serves 6.
