Heloise How to season a skillet
DEAR HELOISE: I have two cast iron skillets which arc over 80 years old but everything is sticking to them. I know there is something one can do to season the skillets but I don’t know what it is or how to work the magic. I hope you do and that you will print this hint in your column. Mrs. J.L. Urich, Sr. * * * The magic is not complicated at all it’s really very simple to do. Just rub the inside of each skillet with unsalted shortening then place the skillets in a 250-300 degree oven for about an hour and a half. Swab the grease around occasionally with a dry cloth or several thicknesses of paper toweling to keep the surface of the skillets evenly coated during the “cooking” process. CAUTION: When removing the skillets from the oven, use a heavy, dry potholder to lift them as they will get very hot! After you remove the skillets at

the end of the hour and or.e-half, let them cooi, then wipe out any excess oil with more paper towels. When they need washing, do not put in a dishwasher. It will remove every last smidgen of the seasoning. Just wash them in sudsy water do not soak rinse, then dry thoroughly. Before storing, rub the inside of the skillets with a bit of vegetable oil. Eventually, the cast iron will need reseasoning. When this happens, just repeat the above process. Since it is so simple to do, there is never any need to put up with a skillet that causes food to stick! Heloise PEELING TOMATOES Dear Heloise: To peel fresh toma toes, take a paring knife and place the back of the blade on the tomato. Firmly but gently rub the whole tomato with the dull edge of the knife. Cut out the stem end and the skin will peel right off. S.H.
