Family album restores precious memories of loved one
DEAR HELOISE: We recently lost our husband and father who was in his fifties. Our daughters made up an album with pictures from their father’s early childhood, Navy years, our wedding, special events with our children and our grandsons over the years. We had the album available so friends and relatives who visited could recall special moments they had spent with him. Our two grandsons, who are under a year old and whom he adored, will not remember their grandfather, but through this album they will see pictures and hear stories about their grandpa. the problem of a bed that’s too high for a child to get in and out of. When the time came to move our son from the crib to a twin bed, he was too short to get up onto the bed by himself. On the floor in one corner of his room I put a carpet remnant as long as and slightly wider than the bed. I then put the box spring and mattress on the carpet. The benefits are threefold. He has a bed his size, no toys get under it and, last but not least, I never have to dust under the bed. To make the bed I just pull on the carpet to move the bed away from the wall. The gratin was contributed by master French chef Jacques Pepin, whom we are fortunate to have living in the United States because he is a superb teacher and cookbook author and recently completed a remarkable television series. The leek gratin is a luscious dish to bring to a “covered dish” party at holiday time. When we baked it in my test kitchen, we used a round copper 116-quart shallow baking dish and it was handsome indeed. JACQUES PEPIN’S GRATIN OF LEEKS 10 to 11 large leeks, trimmed of roots and heavy green tops 4 slices bacon, cut into *6-inch pieces and blanched 20 seconds 1 cup water Salt and freshly ground white pepper to taste teaspoon thyme I*6 tablespoons butter 1W tablespoons flour 1W cups milk

1 cup heavy cream 2 tablespoons grated Swiss cheese 1 tablespoon grated Parmesan cheese Cut the leeks into 2-inch pieces and quarter them. Wash very well and drain. Cook the blanched bacon in a saucepan until nicely browned. Add the leeks, water, salt, pepper and thyme. Cover tightly and cook for 20 to 25 minutes, until the leeks are tender and the water has evaporated. Melt the butter in a saucepan and stir in the flour until smooth. Add the milk, whisking constantly until the sauce comes to a boil. Cook for 5 minutes. is better than none. Good idea! Heloise COLORFUL CLOTHS Dear Heloise: I have a great idea! I entertain a lot and love to use pretty tablecloths. But they are expensive. We have an oval table and a regular tablecloth from the store is just a little too short. Twin flat sheets fit perfectly and hang over the edge just enough. The cost is usually a lot less than the price of a tablecloth and the square comers add just a little touch of elegance to the table. An added bonus... the range of colors is endless. If the sheet is too long, just cut of the excess, hem and use the rest for matching napkins. Carol Arlandirie

TOO MANY ORANGES? Dear Heloise: I received so many oranges for Christmas last year I could not use them all before they spoiled. So, I carefully peeled them, separated each of the little sections, covered with wrap, put them on a cookie sheet and put them into the freezer. When they were frozen, I put them into a covered container and we ate them later as snacks. They were delicious and we wasted none of the oranges. Mrs. Jack Stoner
