Pineapple, honey adds sweet touch to candied yams
DEARHEIAJISE: If you would like to change your recipe for candied yams into the most taste-tempting treat, add one small can of crushed pineapple and one half cup of honey. I use canned yams (sweet potatoes) a 1-pound 13ounce can and drain the liquid, reserving one half cup. This 1 pour into a pan, add a small can of crushed pineapple, one half cup honey, one half cup brown sugar, one fourth cup white sugar, one half teaspoon nutmeg and 3 /4 cup raisins. slowly add two tablespoons flour that has been mixed with one half cup of cool water. I cook it until the mixture has thickened slightly. I arrange the yams in a baking dish, pour the mixture over them and bake them about 35 minutes at 350 degrees. (Set dish on a cookie sheet in case of boil-over.) The last five minutes of baking time, I cover the potatoes with marshmallows and bake until they’re lightly browned. Heloise ICECREAM BUCKETS Dear Heloise: After you’ve eaten the ice cream that comes in those plastic gallon ice cream buckets, you can use them for many things. I covered one with fabric and use it for a handy hair roller container. They can also be used for small toys and are great for large punch bowls. We use them for camper storage bins to keep food in. At Christmas time, our church fills them with fruit and gives them to the elderly or less fortunate. Vickie Cowan
That’s what I call recycling the smart way. Heloise CUVRIFIED butter Dear Heloise: I find it much easier to clarify butter without fear of burning it, by placing the butter in the microwave oven on high for about two and a half minutes. If you will let it cool for about 25 minutes, you can then spoon off the foam from the top of the butter. The clear yellow liquid left above the residue that sinks to the bottom of the container is the clarified butter. You can store this in a jar in the refrigerator for two or three weeks without its getting rancid. I substitute turkey slices for veal in dishes like Veal Parmigiane, Veal Cordon Bleu, etc. Buy a whole turkey and bone it yourself. The turkey tastes great and your family will love it. SPICE CAKES Dear Heloise: Pancakes are the favorite breakfast item with my family and it’s always a treat to experiment with pancake variations. One of the quickest and yummiest is Spice Cakes. Simply add cinnamon and nutmeg to the pancake batter and cook as usual. Cece Holt FESTIVE BREAD Dear Heloise: Your festive braided breads will hold their pretty shape every time if you stick them in the refrigerator for five minutes before baking them. Mrs. R. In it I keep all the papers that are going to the bank, i.e., checks to be deposited or cashed, utility bills, etc. By keeping everything together in the zippered envelope, I avoid losing anything on the way to the bank.
