Homemade cocoa hits the spot on wintry evenings
warms the insides on a cold, blustery night, doesn’t it? You can have some in a hurry with this mix, so keep enough on hand for everyone. Just mix together one fourth cup cocoa, two cups powdered milk, one cup powdered sugar and a dash of salt. If desired, you may use a sugar substitute as a sweetener.
If you like a richer mix, also add one-third cup non-dairy coffee creamer and-or a tablespoon or two of malted milk powder. To use, put approximately four tablespoons of the mix into a cup of boiling water. Stir until dissolved, then add a dash of whipped topping, vanilla ice cream or a few

marshmallows. U-m-m-m, wish we had a hot cup right now. One thing for sure, those winds wouldn’t seem so cold. Hugs, Heloise SPEEDY EGG SALAD Dear Heloise: Have you ever forgotten to hard-boil an egg for a salad, topping for spinach, etc.? I use an egg poacher and cook the eggs until the yolk is completely done. It saves time, fuel, money and you get the same results and flavor. I find it is a quick way to whip up egg salad in minutes with no messy job of peeling eggs. Heloise PINEAPPLE CHUNKS Dear Heloise: When you have a can of sliced pineapple and you need chunks, open the can, take a long-bladed knife and without removing the slices, cut down through the bottom one in the can. Go around through the hole in the slice and cut chunks as narrow or as wide as you wish. Charlotte Farris SOFT SUGAR Dear Heloise: When a bag of white sugar gets too hard to use, the only thing you have to do is drop the bag on a hard surface.

I just bounce mine on the floor or on the table a couple of times and it falls into granules again. No problem at all. I always buy sugar when on sale as it keeps indefinitely, except for becoming a solid mass. Just remember not to drop it too far down as you might split the bag open. I drop mine just six inches or so. If the sugar is extremely hard, you may have to drop it several times. June Loudon ★ * * If you try June’s hint, place the sugar ( bag and all) inside a plastic bag just to be on the safe side. There will be less chance of the paper bag splitting, and who wants to clean up that mess! Heloise CAULIFLOWER COOKING Dear Heloise: A scant tablespoon of lemon juice or vinegar in the water in which the cauliflower is cooked helps it keep its snowy white color. Mrs. R.F. flat block of wood. Place another board on top and give the top board several good whacks with a hammer. Wham! The pan is flat again. Laura Neufeld PUPPETHEAD Dear Heloise: I was reading about projects for children and one about making puppet heads brought back memories from years ago. I remember making them and loving it when I did it in the Girl Scouts. Here's how it’s done: Blow up a balloon to the desired size and tie it. Dip newspaper into a heavy liquid starch, then cover the balloon with strips several layers thick, leaving an opening large enough for 2 fingers, where you have tied the balloon. When it’s dry, usually overnight, paint it a flesh color or any color you wish, and decorate it as usual. Pop the balloon and there you have it a puppet head. You can use a colorful scarf for the body by cutting a hole in the center, and attaching it to the opening of the head, or if you're really clever you can make a little outfit for it. Joyce Averna
