I think you’ll agree with me that they are worth copycatting. If so, please give me the recipe. Then sometimes I’ll buy them, sometimes I’ll make them. YOUR SISTER PHYLLIS. DEAR PHYLL: The Hazelnut Cookies are absolutely delicious and I’ve had them copycatted, guided by the ingredients listed on the bag. I think you’ll approve the homemade version C.B. HAZELNUT COOKIES (Copycat Version) 1 cup all-purpose flour Vz cup cornstarch 4 cup nonfat dry milk powder 4 teaspoon baking soda V 4 teaspoon cream of tartar 4 teaspoon salt 1 cup (4V 2 to 5 ounces) whole shelled hazelnuts, finely chopped (about 14 cups), see Note 4-pound stick butter, at room temperature or cut into 8 pats Vz cup sugar 1 teaspoon vanilla 1 large egg On wax paper or in a medium bowl, thoroughly stir together flour, cornstarch, milk The hoary marmot is a member of the squirrel family. At low speed gradually beat in flour mixture until blended. Shape dough into a ball. Cover; refrigerate until firm enough to roll usually 2 hours. On a pastry cloth with a stockinet-covered rolling pin, roll 4 of the dough at a time (keep remainder refrigerated) to (generous) thickness. With a 13/4-inchl 3 / 4 -inch cookie cutter cut into rounds. Place about 1 inch apart on ungreased cookie sheets. Bake in a preheated 400-degree oven until bottoms are golden brown utes. With a wide metal spatula remove to wire racks. Cool completely. Store in a tightlycovered container. Makes 5 to 6 dozen. Note: The nuts should be chopped so that some of them are very fine and some the size of rice grains. You can use a hand-operated rotary grater that does not grate uniformly, a food processor or a sharp knife. If any of the pieces are larger than rice grains, chop them by hand with a sharp knife so they are that size.

According to Carole Franz, spokesperson for Castle & Cooke Foods’ Dole Pineapple, the recipe couldn't have been developed before 1903 because canned pinepple wasn’t invented until then. But it is obvious Americans were well aquainted with the cake by 1925 when the Hawaiian Pineapple Co., as Dole was known then, ran an ad for a recipe contest, looking for creative and original recipes using pineapple. The contest drew a response of 60,000 recipes for Pineapple Upside Down Cake. Franz says food history authorities report the term “upside down cake” wasn’t used much before the late 19th century, but that style of baking

By CECILY BROWNSTONE Associated Press Food Editor Some of the best crackers we have ever baked aren’t like storebought crackers ours have their own individuality. But storebought crackers and our homemade ones do share one virtue both are delightfully crisp. Our crackers are large: each is an uneven round about 8 inches in diameter. To roll out the dough for each cracker easily and quickly, we use a pastry cloth and a stockinet-cov-ered rolling pin. We first tried a cracker recipe of this sort, using all white flour, about half a dozen years ago. Since then we’ve experimented with the formula, using white flour plus flour milled from grain other than wheat. This technique dates back to days when cooks did not have bake ovens at home and nicknamed their dishes “skillet cakes.” Franz says this is the authentic recipe that won Dole’s first recipe contest: Drain the juice from 1 can (20 ounces) either crushed or sliced pineapple. Sift 2 cups flour. Sift again with 2 teaspoons baking powder and 4 teaspoon salt. Cream 4 cup butter or substitute, gradually add 1 cup sugar; cream well. Beak yolks and whites of 2 eggs separately. Add yolks to creamed mixture; mix well, then add flour and 4 cup milk alternately, mixing well. Fold in the 2 beaten egg whites and 1 teaspoon vanilla.

Add pineapple (if sliced is used, place slices closely together on the sugar; if crushed, simply pour in the well-drained fruit). Pour cake batter over fruit. Bake in moderate (360 degree) oven for about 45 minutes. Turn upside-down on serving dish and garnish with maraschino cherries. Whipped cream may be spread on top. For a quicker version, using a boxed cake mix, try this recipe: Drain 1 can (20-ounce) sliced pineapple, reserving syrup (should have :, 4 cup). Mix 4 cup butter in 10-inch cast iron skillet with heat proof handle. Stir in two-thirds cup packed brown sugar until just blended. Remove from heat. Arrange pineapple in butter mixture. Place a marachino cherry in the center of each pineapple slice. Prepare 1 package (17 ounces) pound cake mix ac-
