Lettuce chicken is speciality of Chinese
By CECILY BROWNSTONE Associated Press Food Editor “Cooking Chinese” has been a welcome fashion in this country for a good many years. Now, judging by the supermarkets and specialty food shops carrying ingredients used in Chinese cooking and by the current sales of woks, interest . in this cuisine is on the increase. Stir-frying, one of the Chinese cooking techniques, takes little time once the ingredients for a stir-fry dish are chopped, sliced, diced or minced. Nevertheless we’ve often wished, along with many other cooks, that some of these stir-fry dishes could be prepared ahead and served cold. Recently we tried a recipe, developed by an American cook, that fulfills this wish. You can serve this dish, Lettuce Chicken, as a first course with a before-dinner drink; offered this way at our house it was a great success. However, you can also serve it along with „ one or more hot dishes as part of a main course at a Chinesestyle supper. LETTUCE CHICKEN r , ■ Sauce Mixture, see below 2 whole (each about 1 pound) chicken breasts 3 tablespoons soy sauce 2 tablespoons peanut oil 8-ounce can water chestnuts, finely chopped 1 cup finely chopped celery 1 cup finely chopped ~ mushrooms Vz cup finely chopped scallions '' 1 head iceberg lettuce (cored, rinsed, drained and chilled) Roasted diced or slivered I toasted almonds, if desired Have Sauce Mixture ready and at hand. Skin, bone and dice (about V4-inch) the raw chicken breasts; mix with the soy sauce and let stand for 15 minutes. In a 10-inch skillet ‘ heat the oil; add chicken mixture: stir-fry fast, using moderate to high heat, until opaque "and cooked through a few 'minutes. Add water chestnuts, 'celery, mushrooms and scalrt lions; stir-fry fast for a few minutes. Add Sauce Mixture: stirring constantly, cook fast . .until thickened and any excess liquid is reduced; chicken and "vegetables should have only a light coating of the thick sauce to bind them together. Chill. Makes 3Mz to 4 cups. At serving time arrange lettuce, core side down, on a serving dish preferably a ARTHRITIS PERSONALITY? ; ATLANTA (AP) -Is there fan arthritis personality? ? Eaters remove the lettuce leaves, spoon portions of the chicken mixture into the centers of them and fold over or roll up to enjoy in pick-up fashion. If the almonds are served, eaters sprinkle them over the chicken mixture before rolling it in the lettuce leaves. (Instead of serving the head of lettuce whole you may, if you prefer, separate the leaves and arrange them around the edge of a shallow bowl, putting the container of chicken mixture in the center.) Sauce Mixture: In a small bowl thoroughly stir together % teaspoon salt, V 2 teaspoon dry mustard, 1 teaspoon chicken bouillon granules, IV2 teaspoons cornstarch and 2 teaspoons chili powder. Stir in Ms cup hot water, keeping smooth. Add 116 teaspoons minced ginger root and % teaspoon minced garlic.

Pooling resources is method of solving growing problem
INDIANAPOLIS t API An umbrella agency to co-ordinate treatment of child abuse victims in Marion County is necessary for efficient handling of the problem, according to a community task force report. More than 1,300 cases of child abuse and neglect were reported in Indiana’s largest county
Blazer workshop to beheld in January Carol Turner, extension home economist from Vigo County, will conduct a six-hour three-day free workship on making blazers on Fridays Jan. 15, 22, and 29 from 9:30 until 11:30 a.m. at the Putnam County 4-H Community Building. Mrs. Turner will demonstrate techniques and will supervise construction of the blazers. Women who attend will make McCall pattern 7263. This pattern is for a blazer with set-in sleeves, notched collar and patch pockets. Patterns are necessary for the first lesson and women who wish to bring fabric may do so during this time. Enrollment is limited to 20. To enroll, interested persons are asked to call the county extension office.

The report made six general recommendations in addition to urging the establishment of the child abuse resource center. The recommendations suggest: —lnitiating programs not now existing. —Centralizing and coordinate the education and training of professionals, volunteers and the public. —Standardizing procedures for identifying and detecting child abuse. Organizing a case management system. —lmproving interagency relationships. —lmproving access to services.

TOLEDO, Ohio (AP) - The windmill a prime source of electricity in the rural United States during the early 1900 s is making a comeback in the ’Bos, thanks to glass-fiber-rein-forced plastic composites. “Composite wind blades are roughly half the weight of traditional wood and aluminum units,” reports Jack Jenks of Owens-Corning Fiberglas Corp. “The weight savings add significantly to a windmill’s efficiency, since more wind power
