Terrell offers a mouthwatering chicken rotel recipe

Annetta Terell, a wife, mother and grandmother, is circulation supervisor/children’s programmer at the Conley Branch Library, Muncie. Terrell said her interest in cooking began early. “My, mother, Minnie Coy (now deceased), was an avid baker. I remember how Fd get off the school bus and my friends would just go wild over the smells of cakes, pies and cookies coming from our house.” “We’d always have big dinners on Sunday with lots of guests’she said. Terrell said when she was 11, her mother had to have hip replacement surgery. “She’d taught me to cook everything, using a pinch of this and a dab of that. During this time, it all came in handy"’ Her cooking tip is , before you try out any new recipes on the public, try them on your family. Here are some of her favorite recipes: Yam Casserole 40 oz. can yams, drained 3 eggs, beaten 11/4 cups white sugar 2 tsp. vanilla 1 sticks melted margarine Ibpping 1/2 cup flour 1/2 stick melted margarine 1 cup brown sugar 1 cup chopped pecans

Mash yams, and add other ingredients. Spread in 7 x 11 pan. Ibp: Mix nuts, flour, and brown sugar. Sprinkle over yams. Pour melted margarine over top. Bake at 350 degrees 35 to 40 minutes. Orange Punch One 12-ounce can orange juice frozen concentrate 1/4 cup powdered lemonade mix, any brand 1/2 cup sugar 2 (64-ounce) jugs of orange HiC 12-liter bottle Sprite Ice Mix first three ingredients in a quart jar. Fill with water. Put in freezer, until slightly slushy Dump into a punch bowl (2) 64-ounce jugs of orange Hi C. Add one 2-liter bottle of Sprite. Add slushy orange juice mix with crushed ice. Excellent for the holidays. Mom’s Apple Cake 1 cup oil 1 tablespoon vanilla 1 cup white sugar 1 cup brown sugar 2 eggs 2 cups flour 1 tablespoon baking soda 1 tablespoon cinnamon 1/2 teaspoon salt 3 cups raw apples, chopped or diced

Beat together, with a spoon, first five ingredients. Add cinnamon to mixture. Mix flour, salt and soda. Stir into first mixture. Add 3 cups of raw apples. Mix together. Bake in 9 x 13 pan, 1 hour, at 325 degrees. Cake is so moist and rich you do not need icing. But, if you prefer icing, cream cheese is an excellent choice. Jell-O Dessert 1 big box lemon Jell-0 1 can crushed pineapples 1 pkg. dream whip 8 oz. pkg. Cream cheese Green food coloring 1 pkg. grated cheddar cheese 1 tablespoon flour Fix boxes of lemon Jell-O, color with green food coloring. Drain can of crushed pineapple, saving the juice. Put pineapple in Jell-0 and let set. Mix package of dream whip, as usual. Add 8-ounce package of cream cheese. Whip together. Spread on top of Jell-O. Let that set. Mix pineapple juice, 1/2 cup sugar. 1 tablespoon flour, and 1 egg. Cook, slowly, in small pan on stove, until thickened. let this mixture cool, then spread on top of cheese mixture. Top with grated cheddar cheese. Enjoy. Chicken Rotel Cooked chicken, diced

Chicken broth 1 stick margarine (softened) 1 onion, chopped 1 green pepper, chopped 1 small can mushrooms, drained 1 can peas-drained Icanrotel Large package of cheddar cheese 11b. box spaghetti Boil or bake desired amount of chicken. Dice it. Cook spaghetti in chicken broth. Drain spaghetti. Melt butter. Add all ingredients and bake in a 350 degree oven until mixture starts to bubble, (about 15 to 20 minutes) Baked Chicken Breasts 4 to 5 boneless, skinless chicken breasts Salsa Shredded cheese of your choice

Line a 9 x 13 pan with aluminum foil. Place chicken breasts in pan, on top of the foil. Bake covered for 30 minutes or until done. Remove from pan. Spoon Salsa from jar on each chicken breast. Top with shredded cheese and put back in oven uncovered, until cheese melts.
