Soak and wash collard greens. Remove all grit. Remove hard stems. Place greens together in small bunches. Roll together. Cut crosswise into wide strips. Place greens, water, onion and turkey wings in large pan. Season with sugar, pepper, garlic and salt substitute seasoning. Cook until greens are soft and tender. PEAR UPSIDE-DOWN CAKE 2 tbsp. firmly packed brown sugar 2 tbsp. Butter Flavor Crisco, melted 2 med. pears, peeled, cored and sliced 3 eggs, separated l/2c. granulated sugar 1 c. all-purpose flour 1 tsp. baking powder 1 tsp. cinnamon l/4tsp. mace l/8tsp. nutmeg l/3c. milk 1 tsp. grated lemon peel 1 tsp. vanilla Heat oven to 350 . Brush 9-inch pan lightly with Crisco oil. Line with wax paper. Combine brown sugar and Butter Flavored Crisco. Spread in bottom of pan. Arrange pear slices in single layer over brown sugar mixture. Beat egg yolks until thick and lemon colored. Add sugar gradually, beating well. Combine flour, baking powder, cinnamon, mace and nutmeg. Add to egg mixture. Stir in milk, lemon peel and vanilla. Beat egg whites until stiff peaks form. Fold into flour mixture. Spread over pear slices. Bake at 350 for 30 minutes or until toothpick inserted incenter comes out clean. Cool one minute. 1 c. all-purpose flour 1 tbsp. baking powder l/2tsp. cinnamon 1/4 tsp. nutmeg 1/4 tsp. salt 1 c. fresh or frozen dry pack blueberries 2 eggs 3/4c. orange juice 1/4 c. Crisco oil Heat oven to 400 . Oil 18 medium (about 2' - inch) muffin cups or use paper or foil liners. Combine flour, baking powder, cinnamon, nutmeg, and salt in medium bowl. Remove one tablespoon . Toss with blueberries. Combine eggs, orange juice, and Crisco oil in small bowl. Beat with fork until blended. Add allat once to flour mixture, stirring with fork just until dry ingredients are moistened. Fold inberries. Spoon evenly into muffin cups, filling about half full. Bake at 400 for 20 minutes or until tops are very light browned. Cool 5 minutes before removing. Serve warm. UNCLE ED’S FAVORITE BANANA CREAM
