At this time of the year homemakers are getting out their preserving kettle, their jelly bag, and are wielding the jelly spoon. Every family likes jelly at least once a day, if not three times a day. The American people are noted for their fondness for sweets and one of the ways of getting these sweets
is in the form of jelly.
Sometimes hours are spent in a hot kitchen over the jelly kettle with disastrous results. The jelly does not become firm; it is not clear in color; and the homemaker is at a loss to know what to do. There are certain things to be considered in making good jelly. They may be summed up as follows: Work with only a small amount of juice at one time, as la^ge amounts of juice are much more difficult to handle satisfactorily. Use a powdered citrus fruit pectin to supply the necessary jellying substance which may be lacking in the fruit which is be-
ing used for jelly.

Right now r the homemoker could be making peach jelly, or a combination of peach and pear jelly. Other combinations such as apple and peach, or pear and alpple are also delicious. A bland of different juices will produce an unusual jelly which w’ill please not only your guests but your family as
well.
Then of course, there is the old standby grape jelly. This year there is a bountiful crop of grapes which should be made into jelly. There is nothing that will give more satisfaction to the homemaker at the close of the preserving season than many rows of filled jelly glasses, and the greater variety the greater satisfaction created. It pays to stop at this time

City Health Commissioner Explains Action Upon Human Body
By John H. Williams, M. D. (City Health Commissioner.) It is generally acknowledged that a certain amount of physical exercise is essential, if one wishes to enjoy good health. Many years ago, man obtained all the necessary exercises needed in defending himself and family from public enemies and savage beasts. Later on, men obtained sufficient exercise from following their agricultural and pastoral persuits, fishing and hunting. With the advance in civilization, living conuifions became more perplex and occupants became more specialized, and as a result there are a great many people, especially in our cities, who get very little exercise in the performance of their daily duties. The automobile and every modern convenience, which the people, of this age enjoys so much, has helped bring
about this condition.
As a result of this change, certain muscles and organs Of the body have become weak and flabby. In such cases some artificial exercises are necessary to keep these organs and muscles and tissues in a healthy condition. (Every bit of exercise we take and every move we make causes the dstruction of certain body cells. [Nature replaces all such waste of tissue, in health, by adding a little more than was destroyed. This process of replacement is speeded up in exercise of I every kind, and since there are so | many different forms of exercise, brie can select the ones most adaptable and more practical for that
particular individual.

Shoes and stockings should be well fitted so as not to cramp the toes or bind the foot. The heels of. the shoes should be low. In walkiing one should try to keep the body erect, head up, abdomen in, shoulders hack, and chest out. In striding along, the feet shoulld he kept aprallel with the toes pointing straight ahead. The arms should swing freely from the shoulders. For the average person in good health who is getting little or no other form °f physical exercise, a walk or from three to five miles per day is sufficient. After completing the -walk, a warm shower should be taken, followed by a brief one lasting about thirty sesonds. Rilb the skin vigorously with a coarse dry towel until dry, then change to clean fresh clothing. 'Hbresback riding is also a wonderful form of exercise and is especially beneficial for persons ‘suffering from gastro-intestinal disorders. The rhythmic vfbration obtained from the gart of the horse, is very beneficial to the internal organs and body of the rider.
