STEWED RICE
Put one-half ounce at butter into s pot, snd fry in it until brown an onion sliced, then add one-half pint of soup stock or beef liquor, one-half cup of rice, pepper, salt and a bit of cayenne. Cover and stew for fifteen or twenty minutes or until the rice is tender. Stir frequently
to keep from burning.

~ MELANGE OF RICE
Prepare by chopping fine, measuring after chopping, one cup of cabbage, one-half cup carrot, one cup potatoes, one-half cup turnip, one-half cup onion and a little celery. Put these vegetables into a kettle with two quarts of hot water and let boil one hour. Then add salt, pepper and a pinch of cayenne. Let boil half an hour longer. Just before serving stir a cupful of milk into a cup of cooked rice (warmed), add te tbe vegetables with a tablespoonful of butter and serve hot. Do not let the
soup boil after the milk and rice arc added.
BAKED EGGS WITH HAM AND RICE Chop one cup of cold ham fine, and miz with it one cup of boiled rice, salt and pepper and one tablespoonful of buttar. Put into buttered pattie pans, set them in a Urge pan and put into the oven till warn.
