Timing Important In Salting Food CHICAGO (INS) — There’s a timetable for using salt In your cooking and baking. The Salt Institute of Chicago says knowing when to salt is jest as important as knowing how much to salt to bring out the beat flavor in cookery.- m Here are the institute’s suggestions: When baking bread, rolls or other yeast products, the salt should be added to the liquid and not to the dry ingredients. The liquqid carries thte salt evenly throughout the dough. For cakes add the salt to the eggs to spread this seasoning evenly through the batter. For smooth cream soups and sauces, mix the salt in with the flour before adding the liquid and it won’t become lumpy. Vegetables' should be cooked in salted water. k Eggs poached in salted water tend to kee ptogether and from spreading. Los Angeles — About SO percent of all U.
